This is a soup that tastes gourmet; it’s healthy and easy to make. It doesn’t get any better in my mind!

1/2 pound of mushrooms sliced

1/2 cup of chopped onion

2 T. Butter

1/2 to 1 teaspoon of curry powder

3 cups of vegetable broth

1 can of pumpkin

1 can coconut milk

2 T. honey

salt, pepper, 1/4 t. nutmeg

chives, sour cream to garnish.

In a large sauce pan, saute the mushrooms and onion in butter until tender. Stir in the curry powder until well blended. Add broth. Bring to a boil. Add pumpkin, milk, honey, salt, pepper and nutmeg. Garnish with sour cream and chives.
